Looked at lots of vegan cookbooks in a book shop and decided that Rose Elliotts was one of the best I had seen as her recipes are fairly straightforward to prepare as they dont have too many ingredients, and the meals are complete and nourishing. She has researched the subject of being vegan thoroughly, and has given all the nutritional information you would need to know if one was wanting to become vegan, or if one is already as I am this book is very helpful as new and simple recipe ideas are a great help to have at hand especially when my family are visiting.
